The best season of the year also happens to have some of the best drinks. Ciders and pumpkin ales get most of the attention, but I want to bring it back to basics with a variation on the classic Stone Fence cocktail, which is a great fall drink in itself. Where the Stone Fence uses Angostura bitters and apple cider, the Stone Wall forgoes that in favor of simple syrup and club soda. Bourbon is the drink's core, and with a cocktail this straightforward you don't want to skimp on the quality. Maker's Mark, Knob Creek and Evan Williams Single Barrel are all top shelf taste-wise but won't empty your wallet.

INGREDIENTS

2 oz. good bourbon

1/2 oz. simple syrup

club soda

A highball glass works best (doesn't it always?) Combine the bourbon with some ice, then stir in the simple syrup. Top it off with club soda. Enjoy and repeat as often as needed.
